Gabriel must get out of your little comfort zone. Stop the political talk and the lame threats. Use the existing law against the crimes and criminals. It must be so at all times and for all offenders. Plain and simple!

This type of behavior by butchers has been the order of the day from way back when. I have witnessed butchers hiding animal organs (lungs, heart) before inspections. They would even recover rejected body parts after inspectors are gone. Back then I was just a kid and couldn't do anything about it. There has always been a lack of respect for authority on the island which is the route cause for where we are today. More law enforcement is needed for them to comply. Arm the inspectors but with proper training.

Until somebody takes the responsibility of explaining to the butchers the importance of proper santitary methods when slaughtering animals then the butchers will continue to take umbrage with regards to Health inspectors encroaching on their space. Educate them first then inspect. Another thing is, when imported meats enter the country, who inspect these meats? Or are foreign foods much more sanitary than our local produce? I've never heard anybody die yet as a result of our locally butchered animals.what's really the big deal now? Or are they targeting specific butchers? We've got a problem and we need to find out what it is. It seems to me that government want to control every aspect of our lives and some of us don't take too kindly to modern practices. Sometimes our primitive way works just fine for us. The health inpsectors are up in everybody's business, so why aren't they speaking about those food stalls by the Castries Market, where rats and other critters roam about on utensils at night and food get cooked in them by day? The food stalls by the Castreis Market are less than sanitary yet nobody takes notice. I guess if they really get down to the reality of things it's all about money. And does one need a license to kill animals and sell the meat? Hmmm...something just ain't right!
