Ladera Chef Cooks For Conde Nast Media

It's kind of weird and telling that the big "signature" dish that the chef is cooking up is based on imported food--shrimp (probably from Thailand). St. Lucia has such a wealth of local food that you would think the goal would be to showcase something that actually comes from the unique island rather than just focus on something you can get everywhere else.
